Extraction flour obtained from quality ester grains taken at a certain stage of the production process. It is of a finer consistency than our gries. Flour used in the artisanal production of fresh pasta, used in mixture with soft wheat flour or durum wheat semolina. The dough is rough and holds the sauce better. Exceptional for breading fish before frying it; the result will be a dry and crunchy product with an excellent taste. Ideal is the high oleic sunflower oil that, thanks to the lack of carotenes, the frying will be perfectly transparent and not “orange”.
