This special soft wheat flour type “2” is obtained with
process comparable to distillation. The wheat grain
it is deprived of the less valuable elements leaving the aleurone intact,
the vital germ and the noblest bran parts of the grain. Hers
high protein content and its organoleptic characteristics
make it suitable for all types of processing where an excellent
leavening capacity and aromas and friability are sought
particularly perceptible. It is recommended in particular for doughs
that require a long maturation at a controlled temperature
(refrigerator).
