BOTANICAL SPECIES: Artemisia dracunculus L.
BACKGROUNDS: the estragon plant is also called, depending on the regions, tarragon – dragon – targone. Of Russian origin, it was introduced in Europe since the fifteenth century; it is also cultivated in Italy and in particular in Piedmont.
DESCRIPTION: it is a seedling of the Composite family, perennial and very rustic, which survives the strong frosts. It has an intense and spicy flavor, but at the same time subtle and fragrant.
USES AND APPLICATIONS: sand in the past the estragon was appreciated above all for its medicinal virtues, today it is mainly used in the kitchen (to flavor vinegar, flavor salads, chicken, fish and in particular sauces).
STORAGE METHODS: The product should be stored in a cool and dry place, away from sources of light and heat.
MINIMUM SHELF LIFE: 24/36 months in compliance with the storage methods.
