BOTANICAL SPECIES: Satureja hortensis L.
BACKGROUNDS: also known as waxy grass, this species is spread spontaneously in the Levant and in several regions of central-southern Europe, including Italy, preferably in warm and sunny places. It is often cultivated, as in Piedmont, in deep and fertile soils, resorting to nitrogen fertilizers.
DESCRIPTION: the plant is easily recognizable by the erect and well-branched stems and by the long and narrow leaves, similar to those of rosemary, but less leathery and decidedly paler in color. It gives off (in particular the leaves) an aromatic, pungent and persistent smell, similar to that of thyme and has an acrid taste.
USES AND APPLICATIONS: in the culinary field to flavor legumes in general and anchovies; in the industry of liqueurs and bitter wines (such as vermouth); in medicine, for its digestive properties; to obtain the essence.
STORAGE METHODS: The product should be stored in a cool and dry place, away from sources of light and heat.
MINIMUM SHELF LIFE: 24/36 months in compliance with the storage methods.
