BOTANICAL SPECIES: Zingiber officinale.
BACKGROUNDS: native to South Asia, it is cultivated in many countries: Malaysia, China, Japan, Jamaica, Brazil, Sierra Leone and other parts of Africa. It is the first aromatic herb imported into Europe and requires a tropical to subtropical climate for its development.
DESCRIPTION: the ginger plant grows from 60 to 120 cm in height and has fat and knotty rhizomes. These are harvested when the plant begins to wither, are freed from the roots, cleaned, washed (possibly with water), dried and put on the market.
USES AND APPLICATIONS: dry ginger is rarely used in medicine. It is commonly used as an aromatic condiment, in desserts (ginger bread, puddings, biscuits and candied fruit) and for the preparation of some drinks, such as “ginger ale”.
STORAGE METHODS: The product should be stored in a cool and dry place, away from sources of light and heat.
MINIMUM SHELF LIFE: 24/36 months in compliance with the storage methods.
