PRODUCT: CLOVE (CARNATION BUTTON).
BOTANICAL SPECIES: Eugenia Caryophillata aromatica.
ORIGINS: originating in the Moluccas Islands, cloves are also cultivated in Tanzania and the West Indies. The best are still those of Madagascar, Zanzibar and the Comores.
DESCRIPTION: these are the flowering buttons of a large evergreen tree, normally harvested by hand at the exact point of ripeness and dried. They have a strong aromatic smell and a strong and pinching taste. After drying, they lose up to 65 % of water, enriching themselves in essential oil. Good cloves must be heavy, full, with an oil content of 15Ă·20 %.
USES AND APPLICATIONS: as a food flavoring, for the extraction of essential oil (of which the main constituent is eugenol), in perfumery and pharmacy. They are also used for Biedermeier composition.
STORAGE METHODS: The product should be stored in a cool and dry place, away from sources of light and heat.
MINIMUM SHELF LIFE: 24/36 months in compliance with the storage methods.
