BOTANICAL SPECIES: Elettaria cardamomum W. and M.
ORIGINS: the area of origin of cardamom is South India and Sri Lanka. One of the largest producers of cardamom today is Guatemala.
DESCRIPTION: the cardamom plant reaches heights ranging from 2 to 6 meters. The flowers are similar to spike-shaped inflorescences; the pericarps, small and ovoid, contain 15-20 hard, almost black seeds, which represent the used part of this spontaneous plant. Their dimensions vary from 3 to 5 mm; the taste is spicy and very aromatic, the smell pleasant.
USES AND APPLICATIONS: seeds are an essential aroma for Danish sweets; in Arab countries they are infused in coffee to mitigate its bitter taste. Being very hard, they are also pulverized. They are used as a seasoning of some food (mulled wine), to flavor liqueurs and tinctures and in the Indian sauce “curry”. Even in medicine it is sometimes used as stimulants and stomatals.
STORAGE METHODS: The product should be stored in a cool and dry place, away from sources of light and heat.
MINIMUM SHELF LIFE: 24/36 months in compliance with the storage methods.
