PRODUCT: ALLSPICE (ENGLISH ALLSPICE – JAMAICAN ALLSPICE – CARNATION PEPPER – JAMAICAN PEPPER).
BOTANICAL SPECIES: Pimenta officinalis Berg.
ORIGINS: the real allspice consists of the fruits of a mirtacea, an evergreen tree of Central America and the West Indies, cultivated especially in Jamaica, from which most of the drugs on the market originate.
DESCRIPTION: the fruits are small spherical berries arranged in clusters, which are harvested in maximum development, but not at full maturity. Later they are dried in the sun, detached from the peduncles and put on the market. Their diameter, in the dry state, varies from four to eight mm, while the aroma is similar to a mixture of cinnamon, nutmeg, cloves and pepper (hence the name of carnation pepper).
USES AND APPLICATIONS: both Jamaican allspice and similar ones are widely used as an aromatic condiment.
MINIMUM SHELF LIFE: 24/36 months in compliance with the storage methods.
