Pistachio seeds are made up of 56% lipids and are rich
of mineral salts (potassium, calcium, phosphorus, magnesium) and vitamin A.
The content of fiber, protein and carbohydrates is also considerable, while
that of rather reduced water.
Their energy intake is very high, so much so as to exceed that of the
cheeses and sausages. The lipids contained within them are in
most of them monounsaturated, that is, they belong to that class of acids
fats that help keep cholesterol under control. For
the high amount of iron they possess are then indicated in case of
anaemia.
