sifting of durum wheat, freed from foreign substances and
impurities in accordance with the provisions of the law in force (No. 580 of the
04/07/67). It therefore brings the following advantages: – it does not make dust – it does not
sticking pizza dough on the workbench – makes the pizza
more fragrant – allows greater browning of the edge of the pizza –
does not burn during cooking
