This type of wheat takes its name from Senator Cappelli who at the beginning of 1900 cataloged the varieties then present, in durum wheat and soft wheat. The plant is about 180 cm tall and has a low yield per hectare. For this feature does not compete with other weeds. It contains higher percentages of lipids, amino acids, vitamins and minerals, and has characteristics of high digestibility. The combination with the water of the Latemar and the air of the Dolomites, make it a product with an unmistakable taste. The typical area of production is in the Murge. This grain is only organic.
